What are the different types of tea?
The three main categories of tea are: the Green tea, the Black tea and the Oolong tea.

All three kinds are made from the same plant, Camellia Sinensis. The major differences between them are a result of the different processing methods of the leaves:

Black Tea - undergoes several hours of oxidation
Oolong Tea - receives less oxidation
Green Tea - is not oxidised at all.

Bois Chéri produces the Green and the Black Tea.
 
What are the characteristics of the herbal teas you propose?

Lemon grass (or Citronella) is a plant with a delicious aroma, renowned for its soothing and digestive properties. It is particularly beneficial for relaxation.

Ginger is an ancient medicinal plant, once used by the Romans. It is well known as an aphrodisiac, but is also an excellent general stimulant. Reverred around the world for its pungent taste, ginger is a natural spice that is widely prized for its medicinal properties against ailments such as nausea, inflammation and flu. Ginger facilitates digestion and is said to have a real potential for relieving sea sickness. It can act as a sedative, active against colds and cough. It has also a positive effect on circulatory problems.

The Ayapana constitutes for the Mauritians and Rodriguans, the "Miracle Infusion", the cure against all illnesses. The brew of its leaves is astringent, sudorific, diuretic and purgative; it is especially reputed as a digestive, taken as an infusion after dinner. It is efficient against many different diseases: cholera, hypertension, fever, headache, colic, nausea, vomiting, stomach ulcer, liver and pancreatic conditions. The Ayapana juice also stops diarrhoea.

 
What is the ideal time span for the infusion of a tea bag?

Generally between 3 and 5 minutes. An infusion of more than 5 minutes will be astringent and bitter. Those adding milk or sugar to their infusion can go slightly beyond 5 minutes. Depending on different tastes, a 3-minute infusion is qualified as a light infusion. Every additional minute will tend to make it stronger.

 
What are the health benefits of tea?
In the past 20 years, Japan, China, the United States, the Netherlands and the United Kingdom have conducted a number of studies on the health benefits of tea.

It has thus been demonstrated that the risk of chronic diseases, including heart diseases, cerebral attacks and certain types of cancer, was less frequent amongst tea drinkers. Polyphenols, a constituent of tea, are known for their antioxidant activity and represent 30% of the weight of dry tea. Moreover, 85% of the antioxidants in a tea bag are released during the first 3 minutes of infusion.

Tea contains only half the amount of caffeine contained in an equivalent serve of coffee. The health benefits of green tea are equivalent to those of the most popular variety of tea in the world, that is, black tea.

 
What is the difference between Agricultural Rum and Industrial Rum?

For the production of Agricultural Rum, the process consists of the fermentation, followed by the distillation, of pure sugar cane juice.

On the other hand, for the production of Industrial Rum, molasses is used in the fermentation and distillation. Molasses is a by-product of sugar production consisting of residual non-crystallised sugar.

 
What is the particularity of the Saint Aubin Agricultural Rum?

The Saint Aubin Agricultural Rum is the first agricultural rum produced and sold in Mauritius. It is distilled in a potstill, an apparatus made of a reservoir and a small column supplied with coils where the vapor is introduced.

The Potstill is equipped with an integral device permitting the real time interpretation of the recorded parameters. Intervention on these parameters is permitted at anytime.

In this process, it becomes evident that the control of the Potstill is a key element in the production of quality rum.

 
What is the meaning of "Coeur de Chauffe"?

In English, ‘The heart of the distillation': It is the part of the distillation of sugar cane juice (not Molasses) of the best quality, obtained after removing the first part of the distillate (Methanol) and before removing the last part of the distillate.
